Sauce- 2 tablespoons brown sugar
1 teaspoon each curry powder, mustard, salt, ginger
1 tablespoon plain flour
2 tablespoons vinegar
half cup tomato sauce
1 cup water
Blend vinegar and dry ingredients in saucepan. Add water and sauce. Stir over heat till thick. Pour over chops in casserole dish. Bake in oven for 1 to 1 and a half hours. Serve with rice.

Fried Brains
In a bowl soak 4 sets lamb's brains for 30. Remove skin and membrane, place in pan with cold water. Add: 2 tbsp lemon juice or white vinegar. Bring slowly to boil, then reduce heat and simmer, covered, for 1o minutes. Drain pat dry and cut into slices. In a pie pan mix together: Half cup parmesan cheese, three quarters cup fine dry breadcrumbs. In another pie pan beat together: 1 egg, 1 tablespoon water. Coat brains in cheese mixture, then egg, and again in cheese mixture and let stand for 20 mins. Sprinkle if desired with paprika. Fry in deep or shallow oil until golden brown. Serve with parsley and lemon slices. As main course serve on bed of spinach.
