Tagliatelle with veal, wine and cream

600g fresh or 400g dried tagliatelle
500g veal scallopine or escalopes, cut into strips
flour seasoned with salt and pepper
50g butter
1 medium onion, sliced lengthways
50-80ml chicken or beef stock
salt and black pepper
100ml dry white wine
150ml cream
freshly grated parmesan

Coat veal in flour and fry quickly in melted butter until browned. Remove with a slotted spoon and keep to one side. Add onion to the pan and saute gently until soft and golden, 8-10 mins. Pour in wine and cook rapidly until the raw wine smell disappears, then add stock and cream and season. Reduce again, and add veal towards the end. Cook the tagliatelle in boiling salted water until al dente, drain and transfer to a warm serving dish. Check the sauce for salt and pepper, stir in roughly 1 tablespoon parmesan, pour it on the pasta and toss through. Serve with extra parmesan handed round. Serves 4.
